The Praizal Cheese Factory is where the highest quality milk available is transformed into cheese in the traditional way. Each cheese is a unique creation, made with an eye for the smallest detail, in order to arrive at an exquisite artisanal product. It all starts in the main workroom, before moving on to the salting room, the airing room and, finally, the maturing room. In this final stage, the growth of the rind is encouraged and monitored daily, using local natural flora.
